Kiinnostuin jo muutama vuosi sitten kombuchasta mutta en oikein p\u00e4\u00e4ssyt noiden kaupan valmis-kombuchojen makuun. Jokin aika sitten halusin kokeilla kombutsan valmistusta itse ja ilmoittauduin mukaan yhden illan kombutsa-kurssille josta sain itselleni kombutsa-sienen, eli scobyn. Ensimm\u00e4iset er\u00e4t kotitekoista kombutsaa on juotu. Nelj\u00e4s satsi on jo valmistumassa. Vatsavaivojen kanssa painiskelevana koen ett\u00e4 vatsani on voinut paremmin kun olen juonut v\u00e4h\u00e4n kombutsaa p\u00e4ivitt\u00e4in. Voi toki olla ett\u00e4 mit\u00e4\u00e4n todellista muutosta ei ole tapahtunut ja vain kuvittelen n\u00e4in k\u00e4yneen tai vatsa on vain sattumalta voinut juuri nyt v\u00e4h\u00e4n paremmin. Mene ja tied\u00e4, mutta eip\u00e4 tuo ainakaan haitaksi ole viel\u00e4 ollut.  <\/p>\n\n\n\n<p><strong>Kombutsasta lyhyesti:<\/strong><br>Se valmistetaan vihre\u00e4st\u00e4 teest\u00e4 fermentoimalla sit\u00e4 scobyll\u00e4. &#8220;Scoby&#8221; tulee englanninkielisist\u00e4 sanoista &#8220;Symbiotic Culture Of Bacteria and Yeast&#8221;. Suomennettuna se tarkoittaa bakteerien ja hiivan symbioottista kasvustoa. Kombutsaa kutsutaan my\u00f6s Volgan sieneksi, mutta itse en pid\u00e4 siin\u00e4 nimest\u00e4 koska ei se oikeastaan ole sieni. J\u00e4\u00e4htyneeseen vihre\u00e4\u00e4n teehen lis\u00e4t\u00e4\u00e4n scoby-kasvusto ja annetaan fermentoitua yhdest\u00e4 kahteen viikkoa. Hapattamalla kombutsaa viel\u00e4 paljon kauemmin, voidaan valmistaa etikkaa. T\u00e4m\u00e4n j\u00e4lkeen scoby poistetaan ja kombutsa voidaan k\u00e4ytt\u00e4\u00e4 sellaisenaan tai maustaa se halutuilla makuaineilla. Scoby-kasvustoja voi saada kombutsaa tekev\u00e4lt\u00e4 yst\u00e4v\u00e4lt\u00e4 (jokaisessa uudesta kombutsaer\u00e4ss\u00e4 muodostuu aina uusi scoby) tai ostaa valmiina esim Ruohonjuuresta tai Kombucha-keisarilta. <\/p>\n\n\n\n<p>Kombutsan makua on vaikea kuvailla. Ei se oikein muistuta mit\u00e4\u00e4n muuta juomaa. Se on hapahko, mutta mielest\u00e4ni se ei juurikaan maistu kovin paljon teelle. Tosin en ole vihre\u00e4n teen yst\u00e4v\u00e4, joten ei minulla hirve\u00e4n tarkkaa k\u00e4sityst\u00e4 ole mille se maistuu sellaisenaan. Itse olen maustanut kombutsan sitruunalla ja inkiv\u00e4\u00e4rill\u00e4, molemmat melko voimakkaita makuaineita sellaisenaan. Mausteeksi voi laittaa my\u00f6s mustikkaa, vadelmaa, minttua, sitruunamelissaa jne. Valmis kombutsa s\u00e4ilyy j\u00e4\u00e4kaapissa joitakin viikkoja. I have been interested in kombucha couple years now, but never really got to liking the factory-made kombuchas. Some time ago I wanted to try out making my own kombucha and signed in for workshop. I got instructions and a scoby to make my own. First batches of home-made kombucha are already consumed and fourth is coming. I struggle with stomache problems and I think that I have been feeling better for drinking little bit of kombucha every day. It could be just placebo, or perhaps it isn&#8217;t. Can&#8217;t really say. But it hasn&#8217;t made it worse so I keep on testing.  <\/p>\n\n\n\n<p><strong>Shortly about kombucha:<\/strong><br>It is made of green tea by fermenting it with scoby. &#8220;Scoby&#8221; comes from words Symbiotic Culture Of  Bacteria and Yeast. It is also sometimes called tea fungus or Volga mushroom, but I don&#8217;t like those names, because it isn&#8217;t really a mushroom. Scoby-culture is added into cooled down green tea and let it ferment one-to-two weeks. Fermenting kombucha much longer than that you can also make vinegar. After this scoby is removed and kombucha can be either used as is, or flavours can be added. You can get scoby from your kombucha-loving friends (every batch of kombucha creates new scoby) or buy them from specialized shops. <\/p>\n\n\n\n<p>Taste of kombucha is difficult to describe. It doesn&#8217;t really taste like anything else. It is a bit sour, but doesn&#8217;t really taste much of like tea to me. All though I am not huge fan of green tea, so I don&#8217;t really know what it tastes like. I have used just lemon and ginger for flavourings. However you can use blueberries, raspberries, mint and so on. Kombucha stores several weeks in fridge. Purkin suu peitet\u00e4\u00e4n kankaalla, tiivist\u00e4 kantta ei saa laittaa. \/<br><em>Between fermenting I keep my scoby in glass jar with generous 3 dl of kombucha. Scoby stays alive even a year when it is kept in room temperature, dark and get&#8217;s plenty of nutritions, aka green tea and sugar.
