T\u00e4m\u00e4n j\u00e4lkeen marsipaanip\u00f6tk\u00f6 kaulitaan ohueksi levyksi ja levyll\u00e4 peitet\u00e4\u00e4n koko kakku, pohjaa lukuunottamatta. Not any cake, but traditional English Christmas cake. Correctly made classic Christmas cake takes about two months to make because it&#8217;s fed with brandy for about 6 weeks or so. After this, about two weeks before Christmas it is covered with icing. And finally it&#8217;s decorated when the icing is hardened. We ran out of time so we didn&#8217;t feed it that long, but doesn&#8217;t it look fancy!<\/p>\n<p>Hubby used recipe from <a href=\"https:\/\/www.thespruceeats.com\/step-by-step-classic-british-christmas-cake-435078?utm_source=pinterest&amp;utm_medium=social&amp;utm_campaign=shareurlbuttons_nip\" target=\"_blank\" rel=\"noopener\">The Spruce Eats- page<\/a>.\u00a0 When the cake is baked and cooled down, the surface of the cake is pricked with skewer or fork or similar and 2-3 tablespoons of brandy is poured over. Repeat this every two weeks. Cake should be kept in an airtight cake tin, but we didn&#8217;t have one. About two weeks before Christmas is time for the icing. Small amount of apricot jam is heated in a pan, then it&#8217;s spread over the cake with baking brush. Marzipan is rolled thin and whole cake is covered with layer of it. When marzipan has been allowed to set for day or two, the whole thing is covered with icing. We didn&#8217;t have traditional English decorations available so I used something that I had at home, Christmas tree decorations made of glass and handcraft materials. I don&#8217;t think those baubles are foodgrade glass so perhaps it&#8217;s wiser not to eat that part of the icing.<\/p>\n<blockquote><p><span style=\"color: #008080;\"><strong>Icing recipe is very simple<\/strong><\/span><br \/>\n4 egg whites<br \/>\n500 grams of icing sugar<br \/>\njuice of 1\/2 lemon<br \/>\nWhip egg whites a while and then add icing sugar while whisking. Add also lemon juice. Keep whisking untill icing is creating peaks and stays solid. Spead the icing ontop the the cake and smooth out with icing knife or similar. Allow to harden about a week, but atleast couple days. Decorate as you please.
