I thought to write something about them, since the season is still at hand. Me and my hubby have mushrooming as a hobby. He searches, I collect and identify. He thinks it&#8217;s horrible waste to leave so many mushrooms in the forest. Ofcourse he understands that we can&#8217;t possibly collect all of them and definitely not eat everything either. I am rather conservative and worried mushroomer. I want to learn only couple new mushrooms per season, and I don&#8217;t even like to touch muchrooms I don&#8217;t recognize. Yeah, it&#8217;s a bit silly, but I definitely don&#8217;t want to be responsible for the organ failure or even death of myself or my hubby.<\/p>\n<p>So we only pick couple type of mushrooms we definitely know. Short list include boletus edulis (penny bun), chanterelle, funnel chanterele, polypore, hedgehog mushroom and horn of plenty. Allthough we haven&#8217;t found any horn of plenty on our own. I have &#8220;found&#8221; it only with more experienced mushroomer who pointed it out and said &#8220;there, pick them&#8221;. This Spring we found true morel the very first time. Just one. In our own garden. I am hoping that next Spring there is more than one. And we have also been wandering in the forests without finding any mushroom at all.<\/p>\n<p>Last Autumn we picked milkcaps the first time. They are easy group of mushrooms to pick, because atleast here in Finland there is only one poisonous one, Latarius helvus, which is poisonous even after parboiling it. So it&#8217;s not edible at all. It is easy to recognize because the milk is clear as water, unlike on other milkcaps, which have milk-like liquid. There are other inedible milkcaps too, but they are just bad in taste, not poisonous, but you might want to check this from your local mushroom book. Just to make sure. Only milkcaps bleed milk, so they are easy to spot. You don&#8217;t have to squeeze the milk out of them, just cut or break the mushroom and it will bleed without any force. I usually make a cut with knife to the gills, near the foot. I check every single mushroom like this. This Autumn we have been picking wooly milkcaps, Lactarius rufus, birch milkcaps, curry milkcaps and coconut milkcaps. We didn&#8217;t find any saffron milkcaps. Wooly milkcap is easy to know by it&#8217;s light pink wooly cap. Birch milkcaps are very small, only couple centimeters diameter, lith oringy yellow in colour. Lactarius rufus is rather large mushroom and sort of gingerbread coloured. Curry milkcap is much smaller, but similar colour. This year they are plenty and very large too.<\/strong><\/span><\/em><\/p>\n<p>Coconut milkcaps are easily mixed with common lactarius, Lactarius vietus and Lactarius utilis, but coconut milkcaps smell coconutty. Lactarius vietus has milk that turns gray when it dries, on common lactarius it stays white. It doesn&#8217;t really matter if you can&#8217;t tell them apart, they are all edible after parboiling <span style=\"color: #808080;\"><strong>(according to current knowledge, parboiling\u00a0 milkcaps is just to get rid of the bitter taste, not any poisons in this case)<\/strong><\/span>. However I think it is good to learn to tell identical species apart. Then you learn to pinpoint even all minor differences like what colour the milk turns into or does the mushroom smell particular. There is lot of variation on the colour even inside one species, so colour of the cap cannot be used the only method of identification.<\/p>\n<p>For beginning mushroomers I have couple tips which might help. You should always be very carefull and check every individual mushroom one by one. Even one little mistake can be fatal, however, mushrooming is quite safe when you know what you are doing and can identify edible from poisonous. Mushrooming is fun <span style=\"color: #808080;\"><strong>(except deerkeds!)<\/strong><\/span> and forests are full of free food.<\/p>\n<blockquote><p><strong><span style=\"color: #008080;\">Buy new mushroom book<\/span><br \/>\n<\/strong>Study of mushrooms is gathering more information of their substances and edibility all the time. Old books might have old information, so trust only new ones. For example brown roll-rim is now considered inedible and ugly milkcap is again back to edible selection. Some books might even have errors, so check your local books and choose the one with established well-known authors. Use your local books. Books from other countries might have different mushrooms than your country and sometimes information of edibility is different. For example somewhere in Russia they still think brown roll-rim is edible and in Middle-Europe they think many mushrooms used here in Finland are inedible. Check from many different sources if you are not sure, preferably from several books. You can also get an app for your phone. Do not trust only websites, they often have mistakes.<\/p>\n<p><strong><span style=\"color: #008080;\">Mushroom shows<\/span><br \/>\n<\/strong>Here in Finland we have something called mushroom shows. Local mushrooming associations arrange shows where people can see common mushrooms live and identified. It is easier to identify them in the nature when you have seen them atleast once live, not just photos. Check if your area organizes these or mushrooming walks in the woods.<\/p>\n<p><span style=\"color: #008080;\"><strong>Go mushrooming with a friend<\/strong><\/span><br \/>\nIf you have experienced mushroomer as a friend, go mushrooming with them. They can show you how to find mushrooms, how to identify them and how to clean them.<\/p>\n<p><strong><span style=\"color: #008080;\">Lear only couple species at once<\/span>\u00a0<\/strong><br \/>\nDo not go overboard and learn half of the mushroom book in one go. If you have too many details to remember, you might get sloppy. Select only couple mushrooms, and learn them well. Also learn identical species if any, they might be poisonous. It is important to identify poisonous too, to be able to separate them from edible ones.\u00a0 I have learned only 1-4 edible mushrooms per season and possible identical species if any. Most difficult mushrooms to identify are those growing on tree stups, brown mushrooms and white gilled mushrooms. There are many deadly poisonous in those variety, so you have to be absolutely 100% sure what it is. I don&#8217;t recommend starting on those. Start with easy ones, with no danger on mixing with poisonous ones. Easy species like this are Chanterelle and hedgehog mushrooms.<\/p>\n<p><span style=\"color: #008080;\"><strong>Use all of your senses<\/strong><\/span><br \/>\nWell, not necessary hearing, but all others in active use. Check visible identifications: shape and colour of the cap, shape and colour of the leg, what lies under the cap <span style=\"color: #808080;\"><strong>(gills, pores or spikes)<\/strong><\/span>, how gills attach to the leg, do they bleed milk, is the leg hollow or not, any patterns or rings on the leg etc. Feel the mushroom, is it fragile, solid, slimy, sturdy, soft. Smell it: is the smell dull, fruity, foresty, what does it resemble, is it stinky. Check the spores at home by placing the cap on paper for awhile. Colour of the pores might be important identification. Also where mushroom has been growing can be significant. And lastly, you can taste the mushroom. <span style=\"color: #008080;\"><strong>However, I highly emphasize that tasting is only for experienced mushroomers who know what they are doing, in most cases it&#8217;s not even necessary.<\/strong><\/span> For example some milk caps are bitter in taste and licking the milk can tell you what it is. Tasting a mushroom for identification does not mean to bite, chew and swallow. You NEVER SWALLOW, when doing the identification tasting! \u00a0I have mushroomed about 10 years and only this year I dared to taste a mushroom <span style=\"color: #808080;\"><strong>(curry milkcap)<\/strong><\/span> for identification.<\/p>\n<p><span style=\"color: #008080;\"><strong>Do not eat anything you can&#8217;t identify<\/strong><\/span><br \/>\nOnly prepare for food those mushrooms you can certainly identify. I am using double identification system. When I&#8217;m picking, I identify every mushroom one by one already in the forest, before putting them into my basket. Especially funnel chanterelle require sharp eye, because often there is small Cortinarius growing amongs them. Second identification is done at home when I clean the mushrooms. If I have picked several species I first sort them in piles and then check them again while cleaning. Again, one by one. If I&#8217;m not certain, I will throw those away. Sometimes this means that quite many milkcaps end up in bin. If they have been long time in the basket, they will stop bleading milk. But I like to be certain, even if I have already check them in the forest. Unless there is visible dry milk on the gills.<\/p>\n<p><strong><span style=\"color: #008080;\">Start modestly<\/span>\u00a0<\/strong><br \/>\nAfter picking you have to clean them at home before preparing for food. Mushrooms go bad quite quickly so you might want to clean them the same day. Easy rule is that it takes about double the time to clean them than it took to pick them. I often seem to forget this and end up cleaning late in the evening when it&#8217;s getting difficult to see the details. That&#8217;s why it&#8217;s easier if you clean them as good during the picking, rather than leave all cleaning for home. Large mushrooms, prone to maggots, I always split in the forest to see if they are any good. This saves me for carrying bad, useless mushrooms around the forest. Sometimes if certain mushrooms <span style=\"color: #808080;\"><strong>(like some milkcaps)<\/strong><\/span> requires better identification at home, I leave uncleaned at forest. Just to make sure I have all information for identification with me, like the whole foot. Most timeconsuming to clean is funnel chanterelle, because each mushroom needs to be split in half to make sure there is no creatures inside.<\/p><\/blockquote>\n<p>And then, off to the forest you go. You can find your favourite mushrooms just by trying them out. I think my mushrooming is pretty much done for the season. Some time ago we had mushroom food every single day for a week. Hubby said, can we have a break from mushrooming. I agreed, even though we both like mushrooms. It was a bit too much. Next year we might learn slimy spike-cap, Lactarius lignyotus, matsutake or Hygrophorus camarophyllus. Don&#8217;t really know yet.
