So, prepare yourself for the next Spring and read my tips for the Queen of wild herbs.<\/p>\n<p>Wild herb superfood number one is stinging nettle. Everybody recommends it. And why not. It is easy to recognize and easy to find almost anywhere. It grows even on our own small yard. Stinging nettle, like any other wild vegetable, is at it&#8217;s best when it&#8217;s very young. Rumour says that tiny sprouts don&#8217;t sting, but I don&#8217;t dare to test that and always use gardening gloves and scissors for picking. There are several different types of stinging nettle, so don&#8217;t get confused. Small nettle has a bit rounder leafs than common nettle. Rumour has it that small nettle stings a bit feistier than common nettle, but they are both equally good wild herbs. It&#8217;s possible to confuse young stinging nettle sprouts with white dead-nettle. White dead-nettle also has hair here and there, but they don&#8217;t sting. If you accidentally pick it instead of stinging nettle, it doesn&#8217;t matter. White dead-nettle is also edible, although it&#8217;s not as nutrient as stinging nettle.<\/p>\n<p>Pick 5-10 cm long sprouts on sunny day, preferably after short sunny period. You can collect older sprouts too, but then take only leafs or approximately just 10 cm from the top end. Later in the Autumn you can collect nettle flowers and seeds. Stinging nettle gathers nitrates and for this reason, you should not pick it nearby dog paths, roadsides, around rubbish heaps, farmhouses, dung piles or other areas that have loads of nitrogen in the ground. You can collect it around garden heaps, but then you should parboil them before using. Long sunny period reduces the amount of nitrates. According to some sources barboiling reduces them, but unfortunately it also destroys some good nutrients. Parboiling also destroys stinging hairs. If you have collected them from area that doesn&#8217;t have much nitrogen, then parboiling is not a necessity.<\/p>\n<p>Many wild herbs can be used in many different ways. That applies to nettle too. You can use it fresh or dehydrated. Fresh nettle is rinsed if needed, parboiled&nbsp;and drained. You can freeze parboiled nettles for later use. You can also dry nettles with dehydrator or just spreading them thinly on paper. Temperature for dehydrating must be less than 35 degrees of Celcius. Parboil nettles if needed before dehydrating and press them dry inside a towel. You can use the parboiling water for watering your house plants.<\/p>\n<blockquote><p><span style=\"color: #008080;\"><strong>Fresh (or frozen) nettle<\/strong><\/span><br \/>\nsmoothies<br \/>\nrolls<br \/>\npies<br \/>\nstews<br \/>\nsoups<br \/>\nomelets<br \/>\nwith potatomash<br \/>\npancakes<\/p>\n<p><span style=\"color: #008080;\"><strong>Dehydrated nettle<\/strong><\/span><br \/>\nherb powder<br \/>\nsmoothies<br \/>\nrolls<br \/>\ntea<br \/>\nsalad dressing<br \/>\nmarinades<br \/>\ndip<\/p><\/blockquote>\n<p>I have tried so far nettle rolls and pancakes, where the flavour is quite mild. I&#8217;m not very much into tea or herb powder. However I do like potatomash with spinach, so I&#8217;m going to try out mash with nettle instead. I also love feta cheese-spinach pastries, so will be trying nettle-feta cheese pastries later too.
