Tykk\u00e4\u00e4n tuosta sanasta koska se kuvaa villivihannesten ker\u00e4\u00e4mist\u00e4 ihan justiinsa nappiin. Se on v\u00e4h\u00e4n kuin sienestyskin, kykit\u00e4\u00e4n p\u00e4\u00e4 alasp\u00e4in puskissa ja hortoillaan sinne t\u00e4nne. Kev\u00e4t ja varhaiskes\u00e4 ovat villiyrttien parasta keruuaikaa, sill\u00e4 suurin osa villivihanneksista on parhaimmillaan nuorina versoina. Vanhemmiten monet kasvit muuttuvat kitkeriksi, puumaisiksi, s\u00e4ikeisiksi ja sitkeiksi. Itse\u00e4ni villivihanneksista kiinnostavat eniten nokkonen, poimulehti, kuusenkerk\u00e4t, maitohorsma ja mesiangervo. Ruusun ter\u00e4lehdist\u00e4 olenkin jo aiemmin tehnyt ruususiirappia.<\/p>\n<blockquote><p><span style=\"color: #008080;\"><strong>Horta, hortoilu<\/strong><\/span><br \/>\nVillivihanneksista ja niiden ker\u00e4ilyst\u00e4 k\u00e4ytetty termi, joka tulee kreikan kielest\u00e4 ja tarkoittaa villi\u00e4 sy\u00f6t\u00e4v\u00e4\u00e4 kasvia.<\/p>\n<p><span style=\"color: #008080;\"><strong>Villivihannekset, villiyrtit<\/strong><\/span><br \/>\nLuonnossa villin\u00e4 kasvavat sy\u00f6t\u00e4v\u00e4t kasvit, kuten nokkonen, poimulehti, voikukka, maitohorsma jne.<\/p>\n<p><span style=\"color: #008080;\"><strong>Jokamiehenoikeus<\/strong><\/span><br \/>\nJokamiehenoikeus koskee kaikkia villin\u00e4 kasvavia sieni\u00e4, marjoja ja kasveja, mutta ei puita. Puista saa ker\u00e4t\u00e4 lehti\u00e4, kukkia, oksia, k\u00e4pyj\u00e4, mahlaa, kasvannaisia tai kaarnaa VAIN JA AINOASTAAN maanomistajan luvalla. Asiantuntijoiden mielest\u00e4 maitohorsma on parhaimmillaan t\u00e4llaisina juuri maasta puskeneena versona. Ne voi valmistaa parsan tapaan keitt\u00e4m\u00e4ll\u00e4, h\u00f6yrytt\u00e4m\u00e4ll\u00e4 tai paistamalla, tai s\u00e4il\u00f6\u00e4 etikkaliemeen. Itse olen toistaiseksi valmistanut niit\u00e4 ainoastaan pannulla paistamalla. Versojen k\u00e4rjist\u00e4 tulee rapsakoita ja mausta hiukan p\u00e4hkin\u00e4inen. That will eventually settle down a bit. Try and bear with me.<\/p>\n<p>I mentioned earlier, that this Summer I want to learn to collect wild herbs. Spring and early Summer are the best season for collecting wild vegetables, because most of them are best when young sprouts. Most wild herbs and vegetables turn bitter, woody and chewy when they get older. I am mostly interested in stinging nettle, lady&#8217;s mantle, willow herb <span style=\"color: #808080;\"><strong>(fireweed)<\/strong><\/span>, meadowsweet and spruce. In Finland we have this thing called &#8220;everyman&#8217;s right&#8221;, which means that everyone is\u00a0allowed to pick wild berries, herbs and mushrooms. However, spruce or any other things from trees are not included on the everyman&#8217;s right. So I can collect everything else except spruce from where ever I can find. My family owns some forest but it is 100 kilometers away, so I would have to travel there to get the spruce.<\/p>\n<blockquote><p><span style=\"color: #008080;\"><strong>Horta<\/strong><\/span><br \/>\nWild herbs and vegetables, word comes from Greek and means wild edible plants.<\/p>\n<p><span style=\"color: #008080;\"><strong>Wild vegetables and herbs<\/strong><\/span><br \/>\nAll wild plants that can be eaten like stinging nettle, dandelion, willow herb etc.<\/p>\n<p><span style=\"color: #008080;\"><strong>Everyman&#8217;s right<\/strong><\/span><br \/>\nIn Finland we have a law that allows us to collect wild mushrooms, berries and herbs from where ever we can find them, even from private land, excluding people&#8217;s yards, gardens and fields with crops. <span style=\"color: #008080;\"><strong>Check your local legislation and rules for collecting wild herbs and berries in advance.<\/strong><\/span> Tree leafs, sap, bark, branches and cones straight from the tree are, however, excluded. Allthough, with\u00a0the landowner&#8217;s permission, you can do that too, but you have to ask the permission in advance.<\/p><\/blockquote>\n<p>Let&#8217;s start with <a href=\"https:\/\/en.wikipedia.org\/wiki\/Chamaenerion_angustifolium\" target=\"_blank\" rel=\"noopener noreferrer\">willow herb<\/a>, because at the moment the season for that is at it&#8217;s best. It is something that is easy to recognize. Long and narrow\u00a0dark green leafs are pointing to all directions. Young willow herbs are sometimes slightly pinkish and leafs are pointing upwards in a bundle. In southern Finland, some of the willow herbs are already quite large, but in shady areas you can still find young sprouts. Experienced wild herb specialists say that these are at their best when they are very young sprouts. You can cook them by steaming, boiling or frying, just like asparagus. Or put them in vinegarry marinade stock. I have so far only cooked them by frying on the pan. Tips of the sprouts go a bit crunchy and flavour is slightly nutty. Personally I prefer real asparagus, but these aren&#8217;t that bad either.<\/p>\n<p>Later during the summer you can collect just leafs and dry them for tea infusion. Flowers are also lovely for tea or for making pink willow herb juice.
